Baked Chicken Nuggets or little chunks of goodness.

I just made these chicken nuggets tonight and they seriously rocked!  Especially dipped in some Ranch dressing.


Here's the recipe.

1/4 to 1/2 cup plain greek yogurt (I used Fage 0%)
1 tsp of chopped parsley, dried or fresh
a squirt or so of lemon juice (just enough to loosen the yogurt a bit)
1 lb chicken tenders, or 3 skinless boneless chicken breasts trimmed and cut into strips or chunks
1/2 cup or a little more of seasoned bread crumbs (could use Panko as well)
1 tsp of Seasoned salt

Preheat the oven to 400 degrees F; Cut up the chicken into your desired shape.  Mix yogurt, parsley, and lemon juice in small shallow dish.  Mix bread crumbs, and seasoned salt in another separate shallow dish.  Dredge chicken pieces in yogurt mixture until fully coated, then dredge in bread crumb mixture.  Place chicken on Silpat lined baking sheet and bake for about 20-25 minutes depending upon the thickness of your chicken pieces.  Halfway through cooking, flip each piece to ensure even cooking and browning.

Serve to your children (or Husbands, boyfriends, significant others) with ketchup, ranch dressing, or honey mustard dipping sauce and enjoy!
